Mini Valentine’s Day Cheesecake Bites are perfect for sharing with loved ones. These creamy, bite-sized treats are easy to make and packed with flavor.

- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup strawberry jam
- Fresh strawberries for garnish
Instructions
- Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs and melted butter in a bowl. Press a spoonful into each liner.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Spoon the filling over the crusts, filling each liner almost to the top.
- Bake for 15 minutes or until set. Let cool, then refrigerate for at least 2 hours.
- Top each cheesecake with a small dollop of strawberry jam and a fresh strawberry slice.
Notes
- Use room temperature cream cheese for a smoother batter.
- Chilling the cheesecakes before serving helps them set properly.
- Swap strawberry jam for raspberry or blueberry if preferred.
