Description

Mini Valentine’s Day Cheesecake Bites are perfect for sharing with loved ones. These creamy, bite-sized treats are easy to make and packed with flavor.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup strawberry jam
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press a spoonful into each liner.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Spoon the filling over the crusts, filling each liner almost to the top.
  5. Bake for 15 minutes or until set. Let cool, then refrigerate for at least 2 hours.
  6. Top each cheesecake with a small dollop of strawberry jam and a fresh strawberry slice.

Notes

  • Use room temperature cream cheese for a smoother batter.
  • Chilling the cheesecakes before serving helps them set properly.
  • Swap strawberry jam for raspberry or blueberry if preferred.
