1 1/2 cups graham cracker crumbs
1/4 cup melted butter
16 oz cream cheese, softened
1/2 cup sugar
2 tsp vanilla extract
2 eggs
1/2 cup strawberry puree
1/4 cup powdered sugar
Instructions
Preheat oven to 325°F. Line a mini muffin tin with paper liners.
Mix graham cracker crumbs with melted butter. Press into the bottom of each liner.
Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time.
Divide batter in half. Mix strawberry puree and powdered sugar into one half.
Spoon vanilla and strawberry batters alternately into liners.
Bake for 15-18 minutes until set. Cool completely before serving.
Notes
Use room temperature cream cheese for smoother batter.
Chill cheesecakes for at least 1 hour before serving for better texture.
