1 cup graham cracker crumbs
2 tbsp melted butter
8 oz cream cheese, softened
1/4 cup sugar
1 tsp vanilla extract
1 tbsp instant coffee granules
1 tbsp cocoa powder
1/2 cup heavy cream
Instructions
Preheat your oven to 325°F.
Mix graham cracker crumbs and melted butter, then press into mini muffin tins.
Bake the crust for 5 minutes, then let cool.
Beat cream cheese, sugar, and vanilla until smooth.
Dissolve coffee granules in 1 tbsp hot water, then mix into the cream cheese.
Add cocoa powder and blend well.
Whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
Spoon the filling into the crusts and refrigerate for at least 2 hours.
