Ingredients

- 1/2 cup unsalted butter, chilled and cubed
- 2 tbsp powdered sugar
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/4 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C).
- In a food processor, combine flour, butter, powdered sugar, and salt. Pulse until mixture resembles coarse crumbs.
- Press dough into mini tartlet pans. Bake for 10 minutes until lightly golden.
- Whisk together granulated sugar, eggs, lemon juice, lemon zest, and heavy cream.
- Pour filling into pre-baked tartlet shells. Bake for 12-15 minutes until set.
- Let cool before serving.
Notes
- Use fresh lemon juice for the best flavor.
- Chill dough for 30 minutes before baking for a flakier crust.
- Store leftovers in an airtight container for up to 3 days.
