Instructions
- Mix cream cheese, sugar, and vanilla until smooth.
- Combine graham cracker crumbs with melted butter.
- Roll cheesecake mixture into small balls, then coat with crumbs.
- Insert a lollipop stick into each ball and freeze for 30 minutes.
- Dip frozen pops in melted chocolate and add toppings if desired.
- Let set on parchment paper before serving.
