Description

Mini banana oat cups are a healthy, easy-to-make breakfast or snack. They are naturally sweetened with bananas and packed with fiber from oats.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup milk (dairy or plant-based)
  • 1 tbsp honey (optional)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mash the bananas until smooth.
  3. Add oats, cinnamon, vanilla extract, milk, and honey (if using). Mix well.
  4. Fold in chopped nuts or seeds if desired.
  5. Spoon the mixture into a greased mini muffin tin, filling each cup about 3/4 full.
  6. Bake for 15-20 minutes or until the edges are golden brown.
  7. Let cool for 5 minutes before removing from the tin.

Notes

  • Store in an airtight container for up to 3 days.
  • For a vegan version, skip the honey or use maple syrup.
  • Add chocolate chips for extra sweetness.
