Description
Mini banana oat cups are a healthy, easy-to-make breakfast or snack. They are naturally sweetened with bananas and packed with fiber from oats.

- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup milk (dairy or plant-based)
- 1 tbsp honey (optional)
- 1/4 cup chopped nuts or seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add oats, cinnamon, vanilla extract, milk, and honey (if using). Mix well.
- Fold in chopped nuts or seeds if desired.
- Spoon the mixture into a greased mini muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until the edges are golden brown.
- Let cool for 5 minutes before removing from the tin.
Notes
- Store in an airtight container for up to 3 days.
- For a vegan version, skip the honey or use maple syrup.
- Add chocolate chips for extra sweetness.
