Description

A quick and flavorful Mediterranean shrimp penne dish with fresh herbs and a light sauce.


Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, juiced
  • Salt and black pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic, oregano, basil, and red pepper flakes. Sauté for 1 minute.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side until pink.
  4. Stir in cherry tomatoes and olives. Cook for another 2 minutes.
  5. Add cooked penne, lemon juice, and salt and black pepper to the skillet. Toss to combine.
  6. Sprinkle with feta cheese and fresh parsley before serving.
