- 2 cups canned white beans, drained
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 strips turkey bacon, chopped (optional)
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add turkey bacon if using, cook for 2 minutes.
- Stir in tomatoes, beans, broth, oregano, and basil.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
