A hearty Mediterranean bean soup with tomatoes, packed with flavor and nutrients.

Ingredients

  • 2 cups canned white beans, drained
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 strips turkey bacon, chopped (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add turkey bacon if using, cook for 2 minutes.
  4. Stir in tomatoes, beans, broth, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • You can use any type of white beans.
  • For extra flavor, add a bay leaf while simmering.
  • Store leftovers in the fridge for up to 3 days.
