Description
A crisp, lemony Greek salad made with romaine, scallions, dill, and feta tossed in olive oil and lemon juice.
Ingredients
2 hearts romaine lettuce
4–5 scallions, diced
1 bunch fresh dill, chopped
4 oz feta cheese, crumbled
½ cup olive oil
1 large lemon, juiced
¼ tsp salt
Instructions
Rinse romaine and dry well using a salad spinner.
Thinly slice the romaine lettuce.
Dice the scallions and chop the dill.
Whisk together olive oil, lemon juice, and salt until smooth.
Place romaine, dill, scallions, and feta in a large bowl.
Pour the dressing over the salad.
Toss everything together and gently massage with your hands.
Serve immediately or chill briefly before serving.
Notes
For best results, toss the salad just before serving.
Store undressed salad in the fridge for up to 2 days.
Great with grilled meats or warm pita and hummus.
