A crisp, lemony Greek salad made with romaine, scallions, dill, and feta tossed in olive oil and lemon juice.

Ingredients

  • 2 hearts romaine lettuce

  • 45 scallions, diced

  • 1 bunch fresh dill, chopped

  • 4 oz feta cheese, crumbled

  • ½ cup olive oil

  • 1 large lemon, juiced

  • ¼ tsp salt

Instructions

  • Rinse romaine and dry well using a salad spinner.

  • Thinly slice the romaine lettuce.

  • Dice the scallions and chop the dill.

  • Whisk together olive oil, lemon juice, and salt until smooth.

  • Place romaine, dill, scallions, and feta in a large bowl.

  • Pour the dressing over the salad.

  • Toss everything together and gently massage with your hands.
