Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1/2 tsp black pepper
  • 4 cups shredded cabbage
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 lemon, juiced
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in turmeric and black pepper.
  4. Add cabbage and cook for 5 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, add white beans, and simmer for 15 minutes.
  7. Stir in lemon juice and salt.
  8. Serve hot.

Notes

  • For a keto version, omit white beans and add more cabbage.
