A flavorful and healthy one-pot meal featuring tender chicken, fragrant oregano, and zesty lemon over perfectly cooked rice.

  • 2 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 2 garlic cloves (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken breasts and cook for 5-6 minutes per side until golden brown.
  3. Remove chicken and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Stir in rice, oregano, lemon zest, salt, and pepper.
  6. Pour in chicken broth and lemon juice, then bring to a boil.
  7. Return chicken to the skillet, cover, and simmer for 18-20 minutes until rice is tender.
  8. Sprinkle with fresh parsley before serving.

Notes

  • Use brown rice for extra fiber – cook for 40 minutes instead.
  • Add chopped vegetables like bell peppers or zucchini for more nutrients.
  • Store leftovers in an airtight container for up to 3 days.
