Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups water
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2-inch piece ginger, grated
  • 2 lemons, juiced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté for 2 minutes.
  3. Place the whole chicken in the pot and add water.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  5. Remove chicken, shred the meat, and return to the pot.
  6. Add carrots, celery, turmeric, black pepper, salt, and bay leaves.
  7. Simmer for another 20 minutes until vegetables are tender.
  8. Stir in lemon juice before serving.

Notes
