- 1 whole chicken (about 3–4 lbs)
- 8 cups water
- 2 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 2-inch piece ginger, grated
- 2 lemons, juiced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 tsp turmeric
- 1 tsp black pepper
- 1 tsp salt
- 2 bay leaves
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté for 2 minutes.
- Place the whole chicken in the pot and add water.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove chicken, shred the meat, and return to the pot.
- Add carrots, celery, turmeric, black pepper, salt, and bay leaves.
- Simmer for another 20 minutes until vegetables are tender.
- Stir in lemon juice before serving.
