A hearty Italian-inspired bean soup packed with flavor and nutrients.

Ingredients

  • 2 cups dried white beans
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Soak the beans overnight, then drain and rinse.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Add beans, broth, tomatoes, oregano, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Season with salt and pepper.
  8. Remove bay leaf before serving.

Notes

  • Soaking beans reduces cooking time.
  • For extra flavor, add a Parmesan rind while simmering.
  • Serve with crusty bread.
