- 2 cups dried white beans
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
- Soak the beans overnight, then drain and rinse.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add beans, broth, tomatoes, oregano, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- Soaking beans reduces cooking time.
- For extra flavor, add a Parmesan rind while simmering.
- Serve with crusty bread.
