Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 slices turkey bacon, chopped (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, celery, and turkey bacon (if using). Cook for 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Add white beans, vegetable broth, water, bay leaf, rosemary, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Remove bay leaf and season with salt and pepper.
  8. Garnish with fresh parsley before serving.
