Ingredients

  • 1 lb boneless chicken breast, diced
  • 1 package (16 oz) potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup chopped spinach
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned, about 5 minutes.
  3. Add onion, garlic, carrots, and celery. Cook for 3 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add gnocchi and simmer for 5 minutes.
  6. Stir in heavy cream and spinach. Cook for 2 minutes.
  7. Season with thyme, oregano, salt, and pepper.
  8. Serve hot.

  • For a keto version, replace gnocchi with cauliflower florets.
  • For a low-calorie version, use half-and-half instead of heavy cream.
