  • 2 cups white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, thyme, rosemary, and bay leaf. Cook for 1 minute.
  4. Add soaked beans and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes or until beans are tender.
  6. Season with salt and pepper.
  7. Remove bay leaf and stir in fresh parsley before serving.
