A warm and comforting white bean soup perfect for chilly evenings.

Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 slices turkey bacon, chopped
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, celery, and garlic. Cook until softened.
  4. Stir in turkey bacon and cook for 2 minutes.
  5. Add beans, vegetable broth, bay leaf, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Season with salt and pepper.
  8. Remove bay leaf before serving.
