- 2 cups dried white beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 4 slices turkey bacon, chopped
- Salt and pepper to taste
- Drain and rinse the soaked white beans.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Stir in turkey bacon and cook for 2 minutes.
- Add beans, vegetable broth, bay leaf, and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
- Season with salt and pepper.
- Remove bay leaf before serving.
