- 1 cup mixed beans (kidney, black, pinto, etc.)
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 slices turkey bacon, chopped
- Soak mixed beans overnight, then drain and rinse.
- Heat olive oil in a large pot over medium heat.
- Add turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until softened.
- Add beans, vegetable broth, diced tomatoes, cumin, paprika, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45-60 minutes until beans are tender.
- Season with salt and pepper. Remove bay leaf.
- Garnish with crispy turkey bacon before serving.
Notes
- Soaking beans overnight reduces cooking time.
- For extra flavor, add a pinch of chili flakes.
- Store leftovers in an airtight container for up to 3 days.
