- 2 cups dried white beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups chopped kale
- 1 can diced tomatoes (14 oz)
- 4 slices turkey bacon, cooked and crumbled
- Drain and rinse the soaked white beans.
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add the soaked beans, vegetable broth, water, rosemary, thyme, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 1 hour or until beans are tender.
- Stir in kale and diced tomatoes. Cook for another 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with crumbled turkey bacon.
Notes
- Soak the beans overnight for best results.
- You can use canned white beans if short on time. Adjust cooking time accordingly.
