- 1 lb chicken breast, diced
- 1 cup quinoa, rinsed
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- Heat olive oil in a pot over medium heat.
