  • 2 cups dried white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 4 slices turkey bacon, chopped
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and thyme, cook for 1 minute.
  5. Add beans, broth, and bay leaf. Bring to a boil.
  6. Reduce heat and simmer for 1 hour or until beans are tender.
  7. Season with salt and pepper. Serve warm with the crispy turkey bacon on top.

Notes

  • Soak beans overnight for best texture.
  • For a creamier soup, blend half of it before serving.
