Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 lb boneless chicken breast, cubed
  • 6 cups low-sodium chicken broth
  • 1 tsp turmeric
  • 1 tsp ginger, grated
  • 1 cup spinach, chopped
  • 1 zucchini, diced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté for 5 minutes.
  3. Add chicken cubes and cook until lightly browned.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in turmeric and ginger. Reduce heat and simmer for 20 minutes.
  6. Add spinach and zucchini. Cook for another 5 minutes.
  7. Season with salt and pepper. Serve hot.

Notes

  • For a keto version, skip carrots and add more zucchini.
  • Use turkey bacon instead of regular bacon if desired.
  • Store leftovers in an airtight container for up to 3 days.
