- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 lb boneless chicken breast, cubed
- 6 cups low-sodium chicken broth
- 1 tsp turmeric
- 1 tsp ginger, grated
- 1 cup spinach, chopped
- 1 zucchini, diced
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté for 5 minutes.
- Add chicken cubes and cook until lightly browned.
- Pour in chicken broth and bring to a boil.
- Stir in turmeric and ginger. Reduce heat and simmer for 20 minutes.
- Add spinach and zucchini. Cook for another 5 minutes.

- For a keto version, skip carrots and add more zucchini.
