Fudgy Halloween Vegan Pumpkin Brownies with a chocolate swirl, spiced pumpkin batter, and rich dairy-free chocolate base.
Ingredients
Brownie Batter:
⅔ cup vegan butter
½ cup brown muscovado sugar
¾ cup granulated sugar
4 tsp vanilla extract
⅓ cup + 2 tbsp almond milk
1⅓ cup all-purpose flour
1 cup cocoa powder
1 tsp baking powder
¼ tsp salt
½ cup dark chocolate
Pumpkin Swirl:
½ cup pumpkin puree
¼ cup almond milk
½ tsp orange zest
1 tsp orange juice
2 tbsp olive oil
3 tsp vanilla extract
⅛ cup granulated sugar
⅔ cup flour
1 tsp pumpkin pie spice
1 tsp cinnamon
¾ tsp baking powder
Pinch salt
Instructions
1. Make brownie batter and fold in chopped chocolate.
2. Mix pumpkin swirl ingredients until just combined.
3. Spread brownie batter in pan and add pumpkin swirl in wells.
4. Swirl batters with skewer.
5. Bake at 180°C (356°F) for 25 min.
6. Cool completely before slicing.
Notes
For gluten-free pumpkin brownies, use 1:1 gluten-free flour. Chill before slicing for clean edges.
