Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Drain soaked beans and rinse.
  2. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
  3. Add beans, broth, oregano, and pepper. Bring to a boil.
  4. Reduce heat, simmer for 45 minutes until beans are tender.
  5. Stir in olives and feta. Cook for 5 more minutes.
  6. Garnish with parsley before serving.

Notes

  • Soak beans overnight to reduce cooking time.
