2 cups dried white beans, soaked overnight
1 large onion, chopped
2 carrots, diced
2 celery stalks, diced
4 cloves garlic, minced
1/4 cup olive oil
1 tbsp tomato paste
6 cups vegetable broth
1 bay leaf
1 tsp dried oregano
Salt and pepper to taste
Instructions
Drain and rinse the soaked white beans.
Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
Stir in tomato paste and cook for 1 minute.
Add the beans, vegetable broth, bay leaf, and oregano. Bring to a boil.
Reduce heat and simmer for 1 hour or until beans are tender.
Season with salt and pepper. Remove bay leaf before serving.
Notes
Soak beans overnight for faster cooking.
For a creamier texture, mash some beans before serving.
Serve with crusty bread and a drizzle of olive oil.
