  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced

  • 1 tbsp tomato paste
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Stir in tomato paste and cook for 1 minute.
  4. Add the beans, vegetable broth, bay leaf, and oregano. Bring to a boil.
  5. Reduce heat and simmer for 1 hour or until beans are tender.
  6. Season with salt and pepper. Remove bay leaf before serving.
