  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 lb chicken breast, cubed
  • 6 cups chicken broth
  • 1/2 cup orzo pasta
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1/4 cup lemon juice
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and chicken. Cook until chicken is browned.
  4. Pour in chicken broth. Add orzo, oregano, salt, and pepper.
  5. Simmer for 15 minutes until orzo is tender.
  6. Whisk eggs and lemon juice in a bowl. Slowly stir into the soup.
  7. Cook for 2 more minutes. Garnish with parsley before serving.

  • For a keto version, replace orzo with cauliflower rice.
