2 tbsp olive oil
1 lb chicken breast, diced
1 onion, chopped
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tbsp turmeric powder
6 cups chicken broth
2 carrots, sliced
2 celery stalks, chopped
1 cup spinach
Salt and pepper to taste
Instructions
Heat olive oil in a pot over medium heat.
Add chicken and cook until browned.
Stir in onion, garlic, ginger, and turmeric. Cook for 2 minutes.
Pour in chicken broth and bring to a boil.
Add carrots and celery. Simmer for 15 minutes.
Mix in spinach and cook for 2 more minutes.

For keto version: skip carrots and add zucchini.
