  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup Brussels sprouts, halved
  • 1 cup butternut squash, cubed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots, Brussels sprouts, and butternut squash with olive oil, salt, pepper, and thyme.
  3. Spread vegetables on a baking sheet and roast for 25 minutes.
  4. Melt butter in a skillet over medium heat.
  5. Add minced garlic and sauté for 1 minute.
  6. Add shrimp and cook for 2-3 minutes per side until pink.
  7. Serve shrimp over roasted vegetables.
