Ingredients

- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup Brussels sprouts, halved
- 1 cup butternut squash, cubed
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots, Brussels sprouts, and butternut squash with olive oil, salt, pepper, and thyme.
- Spread vegetables on a baking sheet and roast for 25 minutes.
- Melt butter in a skillet over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add shrimp and cook for 2-3 minutes per side until pink.
- Serve shrimp over roasted vegetables.
