  • 1/4 cup sweet chili sauce
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon Sriracha
  • 1 tablespoon sodium-reduced soy sauce
  • 1 pound medium shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons peanut oil
  • 4 cups hot cooked white rice
  • 2 tablespoons bias-sliced green onions
  • 1 1/2 teaspoons toasted sesame seeds

Instructions

  1. Stir together sweet chili sauce, lime zest, lime juice, Sriracha, and soy sauce.
  2. Blot shrimp dry with paper towels and season with salt.
  3. Toss shrimp with cornstarch to coat evenly.
  4. Heat oil in a wok or large skillet over medium-high heat. Add shrimp and cook until opaque, 2–3 minutes. Remove shrimp and set aside.
  5. Add sauce mixture to the wok and bring to a boil.
  6. Return shrimp to the wok and toss to coat in sauce.
  7. Serve over hot cooked white rice.
  8. Garnish with green onions and sesame seeds.

Notes

Swap shrimp with chicken or tofu for variation.

Add steamed veggies for a stir-fry twist.

Use orange zest instead of lime for a citrus kick.
