A comforting and hearty chicken rice soup recipe that’s easy to make at home.

Ingredients

  • 2 chicken breasts
  • 6 cups chicken broth
  • 1/2 cup rice
  • 1 cup carrots, diced
  • 1/2 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Sauté onion, garlic, carrots, and celery in a pot until softened.
  2. Add chicken broth and chicken breasts. Simmer for 20 minutes.
  3. Remove chicken, shred it, and return to the pot.
  4. Add rice and cook for 15–20 minutes until tender.
  5. Season with salt and pepper and serve warm.

Notes

  • For a keto version, replace rice with cauliflower rice.
  • For a low-calorie version, reduce rice quantity or omit it.
