A comforting chicken and dumpling casserole made with tender chicken, vegetables, and fluffy dumplings baked to perfection.

  • 2 cups cooked chicken, shredded
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups biscuit mix
  • 1/2 cup water

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add onions, carrots, and celery. Cook until softened.
  3. Stir in garlic, thyme, salt, and pepper. Cook for 1 minute.
  4. Add flour and stir until combined. Gradually pour in chicken broth and milk, stirring until thickened.
  5. Mix in shredded chicken. Transfer the mixture to a greased casserole dish.
  6. In a bowl, combine biscuit mix and water to form a dough. Drop spoonfuls over the chicken mixture.
  7. Bake for 25-30 minutes or until the dumplings are golden brown.

Notes

  • Use rotisserie chicken for a time-saving option.
  • Add peas or corn for extra vegetables.
