- 2 boneless skinless chicken breasts (about 500 g)
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 2 tablespoons milk
- 2 tablespoons olive oil
- Preheat oven to 200°C
- Slice chicken breasts horizontally to create thinner cutlets
- Combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in a bowl
- Whisk eggs with milk in another bowl
- Dip chicken into egg mixture, then coat in Parmesan mixture
- Press coating to adhere
- Heat olive oil in a skillet over medium heat
- Sear chicken for 2–3 minutes per side until golden brown
- Transfer to baking tray
- Bake for 15–20 minutes until internal temperature reaches 75°C
- Rest for 5 minutes before serving
