Crispy Parmesan crusted chicken with garlic and Italian herbs. A simple baked chicken recipe for quick dinners.

  • 2 boneless skinless chicken breasts (about 500 g)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons milk
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 200°C
  2. Slice chicken breasts horizontally to create thinner cutlets
  3. Combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper in a bowl
  4. Whisk eggs with milk in another bowl
  5. Dip chicken into egg mixture, then coat in Parmesan mixture
  6. Press coating to adhere
  7. Heat olive oil in a skillet over medium heat
  8. Sear chicken for 2–3 minutes per side until golden brown
  9. Transfer to baking tray
  10. Bake for 15–20 minutes until internal temperature reaches 75°C
  11. Rest for 5 minutes before serving

Notes

  • Use fresh grated Parmesan for best results
  • Chicken thickness should be even for consistent cooking
  • Check doneness with meat thermometer
