1 medium head cauliflower, cut into bite-sized florets
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
2 tbsp butter, melted
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper until evenly coated.
Spread the cauliflower in a single layer on the prepared baking sheet. Bake for 20 minutes.
While the cauliflower is baking, mix melted butter, minced garlic, and chopped parsley in a small bowl.
Remove the cauliflower from the oven and drizzle the garlic butter mixture over the florets. Sprinkle with Parmesan cheese.
Return to the oven and bake for another 5-10 minutes, until golden and crispy.
Serve immediately.
Notes
For extra crispiness, broil for the last 2-3 minutes.
You can substitute dried parsley if fresh is not available.
Store leftovers in an airtight container in the fridge for up to 3 days.
