Ingredients
4 large flour tortillas
1 cup shredded mozzarella or vegan cheese
1 cup bell peppers (julienned)
1/2 cup zucchini (sliced)
1/4 cup red onion (sliced)
1/2 cup baby spinach
2 tbsp olive oil
Salt & pepper to taste
Candy eyes or sour cream + olives
Instructions
1. Sauté veggies in olive oil, season lightly.
2. Cut tortillas into strips.
3. Place filling on tortilla, top with cheese.
4. Wrap strips like mummy bandages.
5. Bake at 375°F for 10–12 minutes.
6. Add eyes and serve.
