- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 Parmesan rind
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 slices turkey bacon, chopped (optional)
- Fresh parsley for garnish
