  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, garlic, carrot, and celery. Cook until softened.
  4. Add the beans, vegetable broth, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  6. Remove the bay leaf and blend the soup until smooth.
  7. Adjust seasoning if needed and serve warm.
