- 2 cups dried white beans, soaked overnight
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
