- 2 cans (15 oz each) white beans, drained and rinsed
- 1 cup diced turkey bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp herb salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup heavy cream (or coconut milk for vegan option)
- Heat olive oil in a pot over medium heat.
- Add turkey bacon and cook until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until softened.
- Add white beans, vegetable broth, herb salt, and black pepper. Bring to a simmer.
- Cook for 15 minutes, then blend half the soup for a creamy texture.
- Stir in heavy cream and reserved turkey bacon. Heat through.
- Serve warm with extra herb salt if desired.
Notes
- For a vegan version, replace heavy cream with coconut milk.
- Store leftovers in the fridge for up to 3 days.
