- 2 cans (15 oz each) white beans, drained and rinsed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 tbsp Dijon mustard
- 1 tsp thyme
- 1/2 tsp black pepper
- 1/2 cup heavy cream
- 2 strips turkey bacon, cooked and crumbled (optional)
- Salt to taste
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until soft, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add white beans, vegetable broth, Dijon mustard, thyme, and black pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Use an immersion blender to blend the soup until smooth (or transfer to a blender in batches).
- Stir in heavy cream and heat for another 2 minutes.
- Season with salt to taste.
- Serve hot, topped with crumbled turkey bacon if desired.
Notes
- For a lighter version, replace heavy cream with coconut milk.
- Store leftovers in an airtight container in the fridge for up to 3 days.
