- 2 cups cooked white beans
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened.
- Stir in white beans, vegetable broth, coconut milk, thyme, and rosemary.
