A rich and creamy pasta dish with tender chicken and sun-dried tomatoes, inspired by Tuscan flavors.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken with salt, pepper, and Italian seasoning. Heat oil in a pan and cook chicken until done. Remove and slice.
  3. In the same pan, sauté garlic until fragrant. Add sun-dried tomatoes and spinach, cook until spinach wilts.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
  5. Add cooked pasta and chicken back to the pan. Toss to coat evenly.
  6. Serve hot with extra Parmesan if desired.

Notes

  • Use gluten-free pasta if needed.
  • Add extra vegetables like mushrooms or bell peppers for variation.
  • Store leftovers in an airtight container for up to 3 days.
