Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic. Cook until soft.
  3. Add chicken breasts and cook until browned.
  4. Stir in thyme, rosemary, and chicken broth. Simmer for 15 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Add heavy cream, spinach, and sun-dried tomatoes. Simmer for 5 minutes.
  7. Season with salt and pepper. Serve hot.
