- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic. Cook until soft.
- Add chicken breasts and cook until browned.
- Stir in thyme, rosemary, and chicken broth. Simmer for 15 minutes.
- Remove chicken, shred it, and return to the pot.
- Add heavy cream, spinach, and sun-dried tomatoes. Simmer for 5 minutes.
- Season with salt and pepper. Serve hot.
