Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chicken and cook until no longer pink (5-6 minutes). Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft (3 minutes).
  4. Add chicken broth, crushed tomatoes, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in cooked chicken, heavy cream, and fresh basil. Cook for 5 more minutes.
  7. Serve hot.
