2 tbsp olive oil
1 lb chicken breast, diced
1 onion, chopped
3 garlic cloves, minced
4 cups chicken broth
1 can (28 oz) crushed tomatoes
1 cup heavy cream (or coconut milk for dairy-free)
1/4 cup fresh basil, chopped
1 tsp dried oregano
Salt and pepper to taste
Instructions
Heat olive oil in a pot over medium heat.
Add chicken and cook until no longer pink (5-6 minutes). Remove and set aside.
In the same pot, sauté onion and garlic until soft (3 minutes).
Add chicken broth, crushed tomatoes, oregano, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 15 minutes.
Stir in cooked chicken, heavy cream, and fresh basil. Cook for 5 more minutes.
Serve hot.
Notes
For keto version: Use full-fat coconut milk instead of heavy cream.
For low-calorie version: Skip cream and add 1/2 cup plain Greek yogurt.
