1 lb boneless chicken breast, cubed
8 oz mushrooms, sliced
4 cups fresh spinach
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream (or coconut milk for dairy-free)
1 tsp thyme
1 tsp salt
½ tsp black pepper
Instructions
Heat olive oil in a pot over medium heat. Add chicken and cook until browned.
Add onion and garlic. Sauté until softened.
Stir in mushrooms and cook for 5 minutes.
Pour in chicken broth and bring to a simmer for 10 minutes.
Add spinach and cook until wilted.
Reduce heat and stir in heavy cream, thyme, salt, and pepper. Simmer for 5 more minutes.
Serve hot.
