  • 1 lb boneless chicken breast, cubed
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Heat olive oil in a pot over medium heat. Add chicken and cook until browned.
  2. Add onion and garlic. Sauté until softened.
  3. Stir in mushrooms and cook for 5 minutes.
