A rich and creamy potato soup that’s easy to make and perfect for cold days.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add potatoes and broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Blend half the soup until smooth.
  6. Stir in heavy cream and season with salt and pepper.

Notes

  • For a thicker soup, blend more of the potatoes.
  • Garnish with shredded cheese or chives if desired.
