A rich and comforting creamy mushroom chicken soup, perfect for cold days or when you need a healthy meal.

Ingredients

  • 2 cups chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chicken and cook until browned.
  4. Stir in mushrooms and thyme, cook for 5 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat, simmer for 15 minutes.
  7. Add heavy cream, stir well.
  8. Season with salt and pepper.
  9. Serve hot.

  • For a keto version, use full-fat cream.
  • For a low-calorie version, replace heavy cream with coconut milk.
