A rich and creamy mushroom chicken bake that’s easy to prepare and full of flavor. Perfect for a comforting weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until golden, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté mushrooms and garlic until soft, about 3 minutes.
  4. Add chicken broth, heavy cream, thyme, salt, and pepper. Stir well and simmer for 2 minutes.
  5. Place chicken in a baking dish. Pour the mushroom cream sauce over it.
  6. Sprinkle Parmesan cheese on top.
  7. Bake for 20 minutes or until chicken is fully cooked.
  8. Garnish with chopped parsley before serving.

Notes

  • You can use any type of mushrooms you prefer.
  • For extra richness, add a splash of white wine to the sauce.
  • Serve with mashed potatoes or steamed vegetables.
