  • 2 boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 lemon, juiced and zested
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in orzo and cook for 2 minutes.
  5. Pour in chicken broth and bring to a simmer. Cook for 8 minutes until orzo is tender.
  6. Reduce heat to low, stir in heavy cream, lemon juice, and zest.
  7. Season with salt and pepper. Simmer for 2 minutes.
  8. Sprinkle with parmesan cheese and parsley before serving.
