Ingredients

  • 2 chicken breasts, diced
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add diced chicken and cook until browned.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat, stir in spinach and seasonings.
  6. Simmer for 10 minutes.
  7. Add heavy cream and stir well.
  8. Cook for another 5 minutes and serve.
