A simple and creamy chicken and rice dish that’s perfect for a comforting meal.

Ingredients

  • 4 chicken breasts
  • 1 cup rice
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pot and cook chicken until browned. Remove and set aside.
  2. Sauté onion and garlic in the same pot.
  3. Add rice and stir for 1 minute.
  4. Pour in chicken broth and heavy cream. Season with salt and pepper.
  5. Return chicken to the pot, cover, and cook for 20–25 minutes until rice is tender and creamy.

Notes

  • For a keto version, replace rice with cauliflower rice.
  • For a low-calorie version, use low-fat milk instead of heavy cream.
  • Store leftovers in an airtight container for up to 3 days.
