A creamy and cheesy cauliflower gratin with Gruyère cheese, perfect for Thanksgiving.
Ingredients

- 1 large head cauliflower, cut into florets
- 2 cups Gruyère cheese, grated
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Steam cauliflower florets until tender, about 5-7 minutes. Drain well.
- In a saucepan, melt butter over medium heat. Stir in flour to make a roux.
- Gradually whisk in heavy cream until smooth. Cook until thickened.
- Add salt, pepper, and nutmeg. Stir in 1 1/2 cups Gruyère cheese until melted.
- Place cauliflower in a baking dish. Pour cheese sauce over it.
- Sprinkle remaining Gruyère cheese on top.
- Bake for 20-25 minutes until golden and bubbly.
Notes
- You can substitute Gruyère with another cheese like cheddar or Swiss.
- For a crispier top, broil for 2-3 minutes after baking.
